The results showed that the carboxymethylation occurred not only in the amorphous regions but also in the crystalline regions,at the same time caves and/or cracks appeared on the surfaces of granules.

• 结果表明，羧甲基化反应既发生在淀粉颗粒结构的无定形区，也发生在结晶区，从而使结晶程度降低，结晶区域变小。同时，淀粉的颗粒表面也出现裂纹和洞穴。
