In this paper.the effect of pectolytic enzymes treatment to the quality of concentrated Hawthorn Juice and the enzymatic decomposition of pectic substrances under different conditions are studied.

• 本试验主要研究了浓缩山楂汁加工工艺中酶处理对山楂浸出汁品质的影响，以及在不同条件下果胶酶对果胶质的分解效果，并找出了脱胶程度与浓缩山楂汁质量的关系。
